THEOBROMA CACAO L.

The scientific name of the cocoa tree is "Theobroma cacao L.", it belongs to the genus Theobroma, which in Greek means "food of the gods" of the Bitneriaceae family.

The cocoa tree grows from 5 to 12 meters tall, in the shade of other trees. It has large evergreen leaves and yellow and reddish flowers.

The cocoa fruits are located inside the pods or maracas (ovoid berries about 25 cm long by 15 cm wide) that grow directly from the trunk and the oldest branches.

Inside the ear there are between 20 and 40 grains wrapped in a mucilaginous and edible mass of white color and sweet flavor. Beans taste bitter and astringent.

 The cocoa farmer goes into production the fourth year and its longevity is 40 years. Two harvests are made per year and the average production in Mexico is 500 dry kilos per hectare.
